Ingredients
- Ezy Duck Breast or Leg Confit
- Apricot & Almond Cous Cous
- 3 tbs dried apricots, diced
- 1 tbs Toasted Almonds, slivered
- ¼ Red Onion, diced
- ½ Cup Cous Cous
- ½ Cup Boiling Water
- 1 tsp Butter
- 1 tsp Coriander Seed (ground)
- Salt & Pepper
- 1 cup Watercress
Method
- Prepare Ezy Duck Confit in oven, stovetop or microwave.
- To prepare cous cous, place boiling water in a bowl, add cous cous, then cover and stand for 5 minutes. Add butter, coriander and salt and pepper to taste, then mix through with a fork until light & fluffy.
- Add apricots, almonds, onion and mix until combined.
- Plate up cous cous on a bed of watercress with Ezy Duck to serve.
