Ezy Duck Stir Fry Noodles

Ingredients
- Ezy Duck – Half Deboned, sliced
- 500g Noodles (cooked) (egg noodles, vermicelli or soba)
- Seasonal Vegetables
- 1 large brown onion, sliced
- 12 baby corn spears
- 1 red capsicum, julienned
- 1 large carrot, julienned
- 4 stems Spring Onion, sliced
- 4 tbs Fresh Coriander
- 2 small Chillis, finely diced (optional)
- 1 tbs Ginger, crushed
- 2 cloves Garlic, sliced
- 1 tbs sesame seeds
- ½ Cup Hoisin Sauce
Method
- Prepare noodles in boiled water and strain.
- In a lightly oiled wok, lightly brown onion, then add capsicum and carrot until soft.
- Add ginger, garlic (& chilli) with sliced Ezy Duck and cook until heated through.
- Add spring onions, sesame seeds and noodles and lightly cook for 2-3 minutes.
- Combine Hoisin sauce with equal part water, then add to wok and toss for 2-3 minutes.
- Serve with fresh coriander.
