Ezy Duck Confit with Polenta, Blistered Cherry Tomatoes & Plum Sauce

Ingredients
- Ezy Duck Leg or Breast Confit
- Basil & Parmesan Polenta
- ½ cup Polenta
- ½ L Water
- 1 tbs sweet basil, finely chopped
- 2 tbs parmesan, grated
- Cherry Tomatoes
- 6 Cherry Tomatoes
- ½ clove Garlic, sliced
- 1 tsp Olive Oil
- Salt & Pepper
- Plum Sauce
Method
- Prepare Ezy Duck Confit in oven, stovetop or microwave.
- In a pot, bring water to the boil and add polenta. Stir continuously for 10-15 minutes over medium heat until polenta thickens. Reduce to low heat and continue to stir for further 5 minutes. Remove from heat, add parmesan and basil and stir through, then cover and stand for 5 minutes.
- In a lightly oiled pan, add cherry tomatoes and garlic and cook until blistered, add salt and pepper to taste and remove from heat.
- Warm Plum Sauce (in microwave for 30 seconds, or in saucepan over low heat for 2-3 minutes).
- Plate up Ezy Duck on a bed of polenta with Tomatoes and drizzle Plum Sauce over duck to serve.
