Ezy Duck Confit with Orange & Pomegranate Salad

Ingredients
- Ezy Duck Leg or Breast Confit
- Salad
- 1 medium Orange, segmented
- 1 cup Rocket
- 2 tbs Pine nuts
- 2 tbs Pomegranate seeds
- ¼ Red Onion, diced
- Dressing
- 1 tbs Balsamic
- 3 tbs Olive Oil
- Pinch Salt & pinch Pepper
Method
- Prepare Ezy Duck Leg or Breast Confit in oven, stovetop or microwave.
- Place orange, rocket, pine nuts, onion and pomegranate seeds in a bowl and toss.
- Place dressing ingredients in a separate bowl and whisk.
- Pour dressing over salad and toss until salad is coated.
- Plate up salad with Ezy Duck to serve.
